Feb 11, 2014 · Great post. And, I agree with you. The naturally aged patina is the way to go on a Straight Carbon Steel knife. I also agree that keeping it fairly clean and dry is the key to keeping the knife rust free. As far as the rust thing goes, I live in Florida where, if it's left unattended, a Straight Carbon Steel knife will rust fairly readily.
